The
creation of 6 innovative presentations: Smoked
sea bream, fresh sea bream and sea bass fillets,
eviscerated sea bream and sea bass, and fresh
mussels.
In addition, the companies in the sector
drew positive results from the effort put
into this project, as detailed below:
The estimated useful life of the products
developed and packaged in the project varies
depending on the method of conservation.
The useful life of fresh products packaged
in a controlled atmosphere is seven days.
For vacuum-sealed smoked products, the life
is 60 days and 30 days for vacuum-sealed
cooked molluscs. In the case of fresh products,
it is important to work on improving conservation
and packaging methods in order to increase
the products’ useful life.
The products were welcomed by the HORECA
channel (hotel, restaurant and catering
sector) because they are versatile and easy
to use and prepare.
One of the most interesting products according
to professionals was the smoked sea bream,
and it is possible to develop improvements
to enhance this product's presentation.
The innovative packaging differentiates
this product from other products on the
shelf.
Consumers who purchased the product highly
valued its quality, image and presentation,
and this evaluation improved after the product
was consumed. We can affirm that these are
high-quality products and, as such, consumers'
evaluations improve after consumption.
In the case of smoked sea bream, consumers
can choose each product from among a wide
variety of prices, the competitive advantage
of smoked sea bream should be focused on
quality and innovation more than on price.
It should be pointed out that few buyers
purchased the products during the week of
the study because the same species was on
special offer at the same time in the supermarket.
The other products were being offered at
half the price of our products, so demand
was negatively affected during the study.
A coordinated project was developed between
companies in the sector. These companies
actively participated in the project and
benefited from its results. It is essential
to continue working on the evaluation of
the products in the sector in order to improve
their competitiveness.
A book was published with the development
and results of the market study.
